Taura Natural Ingredients has developed a range of real fruit pastes that add a delicious and innovative flavour burst to a range of bakery and snack applications. The pastes, which are made using Taura’s unique Ultra Rapid Concentration (URC) technology, are perfect as a fruit filling in products such as cakes, biscuits & cookies, and bars.

They are free from artificial flavours, colours and preservatives and offer a delicious taste and aroma, with a shelf life of up to 12 months.

New Zealand-based Taura will launch the pastes at the Taipei International Bakery Show, which takes place from 13-16 March 2014 in Taipei, Taiwan. Taura will exhibit in Area J on Booth 1110~1116 and 1209~1215, in the New Zealand Trade Development Centre.

Taura’s URC fruit pastes provide a range of technical benefits when used in bakery applications. They are bake stable and offer low water activity in dry product environments. When using the pastes, there is no moisture transfer into the base product, which means they can be used easily for visible layering. There is no boiling out of the ends of products during baking when using the pastes, and they are available in either 15kg bags or a pumpable drum format.

Bartolo Zame, Taura’s Head of Sales for Asia-Pacific, said: “Our new pastes are a great way for food companies to add flair and fruit goodness to bakery products. Made from real fruit, with no artificial additives, they look, taste and smell delicious and provide a host of technical benefits that make a baker’s life easier and promise superb end-products every time.”

Also on show from Taura at the Taipei International Bakery Show will be the URC BakeFruit range of premium-quality concentrated fruit pieces for industrial bakery and foodservice operators in Asia. Easy to use, and boasting a long ambient shelf life, the ingredients are suitable for use in a wide range of bakery products, including cakes, biscuits, cookies, muffins, breads and brioches.

URC BakeFruit pieces are designed to provide industrial bakery and foodservice operators in Asia with a delicious, convenient and functional alternative to fresh, candied or dried fruit ingredients. Six flavours are available, all popular among Asian consumers – Blueberry, Strawberry, Apricot, Raspberry, Orange and Gold Kiwifruit.

Developed to meet specific Asian market requirements, URC BakeFruit™ ingredients are Halal and Kosher certified and 100% vegetarian. They offer several unique benefits, including high fruit content, bake stability and low water activity. Containing no artificial colours, preservatives or additives, they are free-flowing, create no mess during preparation and can be stored for up to 18 months at room temperature, with no refrigeration required.

Bartolo Zame added: “We’re delighted to be exhibiting again at the Taipei International Bakery Show, and we’re looking forward to sharing the benefits of our URC pastes and BakeFruit™ pieces with visitors to the exhibition. As always, when our customers purchase URC fruit ingredients, they’ll also be buying into the unrivalled technical and product development support we offer all our customers – a level of service that is unparalleled in the market today.”

URC (Ultra Rapid Concentration) is a unique process of concentrating the taste, texture and natural goodness of fruit into pieces, flakes and pastes for use in applications such as chocolate, baked goods, confectionery and snack bars.
