Penford Food Ingredients has launched PenNovo FR, a non-GMO, potato-based starch system that the company says can replace up to 50% of solid fat in certain applications including baked goods, confectionery bases and fillings, dairy-based desserts, frostings, sauces and spreads. Functional benefits are said to include the fact that it is non-GMO; that it has a bland taste and creamy texture; that it is fat mimetic; and that it maintains cell structure and volume.

The modified food starch is claimed to offer a host of health benefits for adults and children. It can be used for caloric and fat reduction, and is cholesterol-free. Beyond health benefits, PenNovo FR caters to consumers with food restrictions, and is gluten-free, non-allergenic, Halal and Kosher.

“PenNovo FR expands Penford Food Ingredients’ robust product portfolio that caters to the demand for non-GMO ingredients that also provide health and nutrition benefits to manufacturers and consumers,” said John Randall, president of Penford Food Ingredients. “We’re excited to debut this technology at IFT14 as it is the premier platform for food science and technology professionals to learn about the latest and greatest ingredient developments.”

“Now, more than ever, consumers are focused on weight management and nutrition for their families. They are looking to cut calories and fat wherever they can. Additionally, labels such as gluten-free and non-GMO matter. PenNovo FR is a multifaceted ingredient solution that allows food manufacturers to produce great tasting products while reducing saturated and trans-fats.”
