 Harvard University scientist Professor David Edwards has developed WikiCells – a new edible packaging. The new product is an edible membrane developed from a biodegradable polymer and food particles.

 

According to David Edwards, the new packaging can imitate natural membranes that hold food such as grape skins.

Till date, David Edwards and his team have developed a tomato membrane containing gazpacho soup; an orange membrane containing orange juice; a grape-like membrane holding wine; and a chocolate membrane holding hot chocolate.

Currently, the team is working on developing a prototype bottle that features an eggshell-like hard coating in addition to the membrane that could be eaten whole or peeled off.

In a similar effort, Indiana-based MonoSol is developing water-soluble packaging for food, while Leicester-based Pepceuticals is creating an edible coating for fresh meat.
