Van Drunen Farms (VDF) has developed Individually Quick Frozen (IQF) Ginger that can be applied to items like baked goods, marinades, sauces and stir-fry. A substitute for ground ginger, the product is available in dices as well as in a frozen purée.

IQF Ginger can be used in marinades for chicken, steak and fish, and also works well in soups, sauces, salsas, vegetable and bean dishes, and salad dressings. Substituting ground ginger, the typical dried spice, with IQF Ginger for spice cakes, savory-sweet breads and cookies adds an extra kick and an interesting twist to familiar favorites. Diced IQF Ginger can also be candied easily by culinary professionals, which can be enjoyed on its own, added to trail mix or granola, or added to various desserts.
